



SPICED GOLD RUM: ‘Island Street’ blends our single estate ‘Lantern Rock’ gold rum which is fermented, distilled and aged in Salcombe, together with hand sourced golden rums from Jamaica and the Dominican Republic and our Master Distillers unique blend of spices STEEPED IN HISTORY: Distilled in Island Street, where famous 19th century Fruit Schooners and their sailors risked all in their ventures to the West Indies to acquire a much sweeter and more potent payload; sugar, molasses and rum OUR PROCESS: Fermented and distilled at our distillery from a blend of molasses, sugar and a specially selected strain of yeast to achieve a flavour profile that benefits our production method. Hand mixed and fermented in 200L vessels for up to 14 days then distilled on traditional 60L copper pot stills. To save energy we kick start our fermentations using warm water from the cooling process of our gin distillation. The result is a medium flavour profile that complements an aging process accelerated by smaller casks sizes and the varying ‘Caribbean’ warmth and humidity of our waterside distillery room, varying from 14 to 40c! ENJOY THIS RUM: Either on it's own over ice, or top with a great ginger beer and a slice of dehydrated pineapple to complement the rich and warming Caribbean spicing DIETARY: No allergens, no added sugar or colouring, vegan friendly and gluten free RUM FLAVOUR: Sweet notes of soft brown sugar, rum baba cake, toasted coconut, spiced compote, and a hint of pineapple on the nose. Followed by flavours of gingerbread cake, mince pie mix, and warming vanilla with underlying fresh pineapple
